Peach and Arugula Burrata Salad

Ok, I know summer has passed and it’s time to hunker down with warm meals. But I just had to get this posted. This was delicious. If you like burrata it was a home run.

RECIPE:

2-3 cups Arugula

1x handful chopped Mint

2x Peaches sliced

4x slices Prosciutto cut into smaller pieces

sprinkle of Pine Nuts

10x Grape Tomatoes sliced

4x balls Burrata cheese

Garnish with Borage flowers (optional)

Drizzle with Olive Oil, Honey and Balsamic Vinegar

Sprinkle with Salt and pepper

I grow some of this in my garden every year (Zone 4!) grown from seed directly in the soil. It is very fast growing and also helps add calcium and potassium to your soil which makes it an awesome companion plant for tomatoes, strawberries, spinach, brassicas and legumes.

A great addition to any small or large garden!
